Hey,
it has been a while since the STM32FX shortage started. Many manufacturer switch to the more available ESP32 MCU familiy.
Now, what are the practical differences between the old happymodel ES915TX/RX ships and the new ES900TX/RX. I'm mainly interested about what the ESP32 vs the STM32 chips change could bring or remove in term of functionalities, performance (in any form) and other effects you might think of.

Absolutely go for the ESP variants, the ES900TX/RX. They have more features, are easier to flash, etc.
Also, have you considered 2.4GHz? You don't need 900MHz for long range on ExpressLRS.
