Hi Im familiar painting with acrylics but since my acrylics paint are running out im interested on trying gouache paint but my friend said that gouache paint color are hard to mix so im a little bit confused whether i should buy the 24 colors or 56 colors (the price difference is around 20$ and 40$ AUD)

Yes! Gouache paint can mix! I wouldn’t say it’s “hard” but it may be a slightly different process than watercolor. Get the 24 and a YouTube video on how to mix gouache! (You def don’t need the 56)
