Ok so, 2 things:

  1. To put your IP behind the domain, you simply need to create a DNS record (you may need an srv) - https://www.lectron.com/docs/cloudflare-dns-config/
  2. Cloudflare protects against HTTP layer attacks by default and for free, we cannot protect against standard TCP attacks without something like Spectrum/Magic Transit. Both of those cost money.

Most server hosting providers will provide a layer of DDoS protection for you already so you generally should be good if you're using any of those providers.

As I stated above, you'd need Spectrum/Magic Transit to have us protect non-HTTP/HTTPS trafic

I'm not sure if FiveM is supported with Spectrum but you can always test
