Split Stack window is different size for every item I've tried to split. For example it is wider when you split a stack of water than it is when you split a stack of fertilizer.
I think it is scaled based on the Title and/or Description of an item.
It gets even narrower for Cabbage.

If you resize it for cabbage, does the window size reset for subsequent items?

I guess it doesn't, does it. Go to Settings > GUI > Text Sizes > and adjust Pop Up Text Size (decrease value) & Save .. should fix it.
Would be nice if we could manually resize the popup, though

If I bring it up it is better
But then the font is large, so yes I think the best would be to be able to change the window size too
Or make it so that it has the min width and height
