Any suggestions on tackling this? I watched the Vcore 3 video but didn't quite grok what I need to do here...

So excited to get it moving!

When you fix your x gantry to be flat, in which case you can easily do and test by pulling on the middle UPWARDS, your whole bed will mostly correct itself.

By pulling upwards I mean pulling the x gantry up in the middle. By force a bit yes.
