Is it possible to show a graphed output for velocity, acceleration and flow velocity during a print?

Not that I heard of.
Thing is, that you would need a very high resolution on the time axis for it to make sense. Much quicker then the poll on the dashboard.
Even for a short print the curve would be all over the place, not to mention longer ones.
Don't think that it would be practical to handle.

What information do you want to read from it?

You could easily calculate it with excel.
Only if you print a long(er) thick line, the dashboard will show you a constant value.

I use a spreadsheet to calc my maximum speed for my different nozzle sizes... Got several sizes between 0.4 up to 1.4mm

Is there anything online for this? I assume I need to go single wall shape, like a torture test? Yes I want to find my max point for a 0.6 nozzle

Do you have Microsoft excel installed?

You need to do an actual print to find your max flow rate
