Sorry for the noob question / suggestion but I'm brand new, just got the game after reading about it in an article, and am quite lost and frustrated. How do we do all the things? When can we fly? F doesn't seem to work, it's auto mapped to scent too but maybe I didn't wait long enough grow up enough? I get this is like Ark but even that has a basic tutorial.. The UI isn't intuitive either..

We have asked this for years, maybe some day. For now I can only guide you to the https://discord.com/channels/576933363672285186/1067209257616949258 forum, I hope it helps. You can fly when you are 50% juvi. Bios can hover since birth, but cannot fly until juvi. Only food source is the small crabs (or other dragons on pvp servers).
I also suggest to invert your fly mechanics, bc otherwise W is down and S is up
