Cant tell you about what you should do for your career but for subs:
Maths
Physics
Biology
and if you can take a fourth subject: Chem
You can always pivot towards tech with this subject combo; Cs isn't a requirement, instead physics is preferred.
You will need biology if you want to keep your options up for medical. Chemistry opens you to alot of other fields within engineering, so you cant go wrong with it either
Your also flexible to change your mind about your career path with such a combo

Physics is a requirement for most engineering degrees, so it will restrict you. Chemical engineering is still an option though
Physics is also preferred for tech, although I believe maths + 1 science is enough to fill its requirements, but with neither physics nor CS will make you uncompetitive. Check the speicifc uni course your looking into for better details though.
Id suggest drop chem for physics
