go do things that interest you and are related to the degree you want to apply to in college
internship, clubs, competitions
If you prefer to do solo activities, I recommend doing online courses or exams. This can demonstrate to universities that you truly like doing something (for example if you're learning a language like spanish or korean, you can write the DELE or TOPIK exam respectivly. If you're learning an instrument, you can do it's ABRSM or trinity exam. Or if you like coding, you can do harvard's cs50 online course). Of course you don't always need a proof of your hobby but having one is encouraged.
And always, you can go for clubs or competitions
The important thing is do what you like and not what you think the university will like.
online courses are worth nothing, you should build projects after learning them instead of just getting a certificate
Projects are good too but I wouldn't argue online courses are useless. For some activities such as language learning, there's not many ways to implement it into a project.
I was referring to the cs50 part, you already mentioned taking exams to demonstrate your skills in a language or instrument
Oh I agree, projects are more powerful than courses in that case.
