If you went to Eden after last Sunday 12AM PST and saved some of the children, you would not see the ones you saved already today. If your girlfriend hasn't gone yet since last reset but you did, then she would have children to save but you wouldn't. Players have their own set of statues to save, so that could explain why she sees them but you don't.

If we still go few times in eden in a week (example of 3 times a week) do each time we go still increase our cape star even though we dont have any statues to light up?

No, if you don't light up any statues you won't be able to increase your cape stars. In order to increased your flight power, you need to buy wingbuffs (the things that look like locks with wings) from spirits using ascended candles. You get ascended candles by lighting up the statues, and earn 1/4th of a candle for each statue saved. Wingbuffs increase the number of winged light you're reborn with, which allows you to reach a higher flight power once you've also collected winged light from the stars in the levels.
