I always just stick to 40 lands total
As for why 40 lands?
If you want to have 3 lands in your starting hand, you need 43 lands
If you want to hit your first 5 land drops with no extra draws, you need 42 lands
I round to 40 because I like having a nice even number (Calculations done with https://www.mtgnexus.com/tools/drawodds/)
