Typically for introducing dialogue, you should stick to 'said'. It becomes invisible to the reader. Using a bunch of variations tends to distract from the story itself.
An alternate plan is to use action in your dialogue tags:
"What do you mean?" Bill asked.
"You know what I mean." Susan just about slammed the book down. "I don't need to tell you."
