if I try to play a multiplayer server that I am not hosting I cannot see anything but I can still move, open the spawn menu, etc. It is not any mods and I have validated game files.

I have had the same issue, I dropped everything down to low (it doesn't really change much tbh) and I'd close anything running in the background.
