You could move the ears up in your model editor of choice, apply your armature, relink it, and then apply your current pose as the default
are they rigged? you should be able to just rotate the bones then re-apply the proportion trick
since you'll be needing to copy the new bone orientation for every single animation anyways
or, idk, use bone matrices with lua for realtime control.
or adjust the ears as a delta animation that uses an autoplay $sequence ig
And if they're not rigged... hope you know how to model lol
