so i deleted all my addons but all the addons from the servers ive played are still their how do i get rid of them

wait for 2 weeks and any workshop things from servers will be automatically deleted

if that doesn't sound like a good option, yell at valve

You can also delete the cache/ folder in the game's folder safely.
