they're not actually adding updates. every time they push a new commit to production, your launcher downloads the new assets

you're pretty much asking for them to abandon Lunar Client

also updates are necessary for things to work. patches, bug fixes, new features, functionality, etc.

if you hate all the patches, features and bug fixes, i recommend forge where you can pick all the mods yourself! They rarely ever update and if they do, you download it manually anyway therefore you don't need to wait!

you'll have full control over patches & bug fixes that way
