Google high polling rate lag
High polling rate (usually 500hz+) causes performance issues in nearly all games. That's why Lunar shows a popup to warn you about it.
It feels bad because your cpu can't keep up with it. Not the game

Any mouse claiming its better for gaming because it has a higher polling rate, is just garbage

The reason why Lunar shows you a warning for high mouse polling rates is due to the older versions of Minecraft using LWJGL 2 which is known to have issues with high mouse polling rates, causing those stutters. Minecraft used LWJGL 2 until 1.13 iirc, so you don't get this on modern versions of the game.
