The shield sounds are usually configured by the server; plugins are usually present.
Basically a shield block sound for hitting an opponent's shield, and breaking sounds as well.
This makes it much easier to keep track of shield blocks and disables, from yourself as well as your opponent.
If this is already implemented to some extent, I apologize for making a useless suggestion.
Flat lighting (available on modrinth) gives the same effect of optifine's "old lighting off " setting, and would sway many people to switch to fabric instead, as really, it looks so much better than than vanilla tbh.
I would understand why this might be a bit trivial, due to the amount of time it would take, but it would be quite nice.
