There could be an option (maybe in the esc menu) where you can select to leave but then immediately, basically rejoining the server without having to press anything else. There could also be an option to change skins from a menu while in the server, and when confirming to change it, it will quickly leave and rejoin you so it updates your skin.

Is it really so hard to spend half a second rejoining the server tho

But with skin changing, it would be much easier because you need to leave the server and then go to the main menu and then select the skin changer option and only then change it. And then exit that go to the server and then join again.
