What error is the installer giving you?

I am not talking about the Intel Driver & support assistant.
Download the driver from this page. https://www.intel.com/content/www/us/en/download/785597/intel-arc-iris-xe-graphics-windows.html
Once you have downloaded it you will need to run the exe to start the installer.

What driver version does it show in the control panel?

If you installed the driver using the exe from the link I sent and followed all the prompts in the installer then you would be on 31.0.101.5085.
Stop using arc control and the Intel driver & support assistant to check for driver updates, they are not working and only causing confusion in this situation. Try running the exe "gfx_win_101.5085_101.5122.exe" again

Open task manager, go to the performance tab, then click on your GPU, and look for "driver version" in the bottom right.

Are you restarting your pc after using the installer?

And you are downloading the exe called gfx_win_101.5085_101.5122.exe right?

Ok. Follow these steps
Open device manager.
Go to display adapters, right click on the A750, and then hit update drivers.
Hit browse my computer for drivers.
Click browse to point device manager to the 101.5085 driver.
Finally click next
