(Setting: standard mode dropdown) When i add roles in a dropdown to myself reacting, i unreact to all roles, the roles dont remove from my profile

What is the Reaction Role mode you have selected? Make sure you have the selection mode enabled since this is the mode you most likely want to use.

Standard which is the reacting gives roles, unreacting removes roles

The standard mode is little weird for dropdowns, as to it removes/adds roles based on what you select and whether you already have the role.
The selection mode will assign roles based on what you select in the dropdown.

But how do i remove the roles

in the standard mode you have to select the same role again to remove it. For example lets say you have the red role, and you select both blue and red from the dropdown, the bot will remove red (since you already have it) and add blue (since you don't have it).
in the selection mode in the same scenario it will add the blue role and leave red as is.

So if i have 3 roles on the dropdown, i select all 3, i unreact to them all, it says no roles in the dropdown box

correct. That is how the standard mode behaves

change the mode to selection, you can do this by using /reaction-role-settings and selecting "Reaction Roles Mode".
