So I have started planes spotting for like a few months and I have been using photoshop to edit some photos. Well what I do is when I upload an image I get a pop up screen like this and then I basically just edit the colors, contrast and stuff from there. After I click open I just crop a bit and that's it. I really think there should be something else where I can improve, where I can set up, but I don't know where, could you help me?

The NEF is a RAW pixel data file so when you open that in Photoshop, Ps is saying, "Hey, this is a raw file. Let's open it with Adobe Camera Raw first." That will give you a chance to edit it as RAW. If you want to continue editing in Photoshop afterwards, you can.

oh okay okay, but maybe I could edit something else? Because I have seen some tiktoks where people can just choose which places they can darken and which not and I don't understand how to do that

Either way, it's probably going to require using Masks. In Photoshop, you could assign an Adjustment Layer like "Levels" or "Curves" and edit the values. You can then use the Layer Mask feature to selectively show (or hide) the effects of the adjustment by painting on the mask.
