Inside Photoshop the instructions about this function were confusing. Do you have any leads for me?

Trying to scan art work that is too large for scanner bed. Have been told you can knit together 2 or more scans to produce the entire image and print the artwork.

Sometimes Photomerge doesn't recognise the edges of the artwork so it's difficult for it to merge it correctly. If you got a good amount of overlap, that helps, as @winged knoll said.
If that still doesn't help (for example if the background of the artwork is dark, or the artwork itself very faint) you will have to do it manually. Again, there, overlap helps and you will need to place the different scans as separate layers.
One neat trick to place the different layers accurately, is to hide every layer but the first one at the bottom and the one just above, turn the second into a "difference" blending mode, and turn off all the snapping functions (in view > snapping), zoom in really close and move the second layer. When turning the blending mose to "difference" you'll notice the image gets inverted, darker, with lines/shapes appearing very clearly. Like the first screenshot.
When 100% accurately aligned, the image will be 100% black (second sreenshot). When you reach this stage, put the blending mode back to "normal", and lock it so it doesn't move by accident.
Turn the visibility of the 3rd layer on, and rinse and repeat for this one... and same for all the other ones.
Once you're done you can merge the layers or leave them as is if you prefer.
