I have included a snipping of what I am currently working on in PS, as well as an example of what I am trying to achieve. I want to fill in the illustration. I have attempted to use the subject selection tool, and then fill it in. however, it literally won't fill in. Additionally, when I try to pick the color, it only lets me pick the grey-scale.

I am a total novice with PS so I am hoping that this is relatively easily to achieve. Any advice or suggestions would be greatly appreciated!

Hi, I would try to add a gradient layer, clip it to the image layer https://helpx.adobe.com/photoshop-elements/using/clipping-masks.html (alt+click between them)

Then use a blend mode such as multiply to affect only the lighter colors. https://www.photoshopessentials.com/basics/blend-mode-tips-tricks/
