When you import a GIF into Photoshop, you will see that it's composed of several layers, that are animated using the timeline .
Like a stop frame animation (Ie: Wallace and Gromit style)
So you need to open the timeline panel (Window>timeline)
And identify the frame/s where you need to remove the text and check against the layers viisible. And work on those layers
I will not accept any DMs but you can try with any GIF. it's exactly the same like removing text on a photo, but because it's composed of many frames, you need to repeat the process on all the frames concerned
