Heya,
so selecting the text tool and trying to crop the text box, it sometimes won't let me crop down specific sides.

Only once I shrink it down from the other sides, I am able to click on the other sides.

I've attached a GIF on how it looks on my side.

Any hints would be very much appreciated!

what you have here is an area text. It won't let you shrink the box, becaue the box contains not only the letters and the basline but also potential descenders. You can try that by typing something with g, q, p etc

#

if you want to be able to shrink the text (BOO HISS! Don't do that! it's a typographer's worst nightmare! 😉)
You need to turn your area text into point text.
Not sure we can do that in Photoshop (we certainly can in Illustrator)
Typically you would create an area text by dragging and dropping the text tool (T) to draw the area and the result will look like that

#

And creating a point text involves just clicking once on the canvas and results in this look

there it is

the text shouldn't be highlighted (That's the bit I didn't know) and then right click to convert area text into point text. You'll then be able to distort it by using the transform command (Either edit>transform>free transform) or simply CTRL+T

In any case, if you need to squish the letters you can do with the properties panel or the characters panel, so that you actually input numbers
