I am wanting to manipulate my type in a similar fashion to these reference pictures for a university project. Does anyone have any guidiance on how to achive text like this around a point? tutorials are welcome as it is for a uni project. Thank you!

You'll set up the operation and do it one time. Then you can use Step & Repeat to replay the operation as many times as you need. Ctrl T does the Transform. Then Shift Ctrl Alt T will repeat the previous transform.

Then for the fade, you could use a Layer Mask on the Group. The Angle Gradient looks like a good fit for the goal.
