There's an album called Gregorian Winter: Mystic Medieval Chants that is full of songs that aren't what you'll hear on the radio. It's not just chants, it has instrumentation too.
If you're open to Christmas songs that aren't going to immediately tip off your players, the Estonian Philharmonic Chamber Choir has an album called A New Joy: Orthodox Christmas that is fantastic. It is all choral, though.
(I sort of collect this stuff because I love to listen to chant and choral music in the wintertime)

Also, do your players prefer old classical music, or are they also into new classical music?
Not 100% sure honestly, one went to college for something related to music (can't remember :\) and the other's a cellist that seems to be able to pick out a lot of classical musicians whenever a song comes up.
I considered leaving some room in the playlist for them to add songs if they think of any, but I want to make sure they don't have to
