Alright so I have a solid idea of the world and the first actual location and plot, however I dont really know how to take notes, or what to keep track of. How much do I need to prepare, etc.
Also I dont really know how to make the game "balanced" because of my nonexisting experience.
How much is too much for a lvl1 party? Or how to make a cool boss without making him weak and all that stuff around balance.
The only way I can find around this, is making some imaginary characters and putting them against these enemies to see how strong the enemies are, but that seems to be a very long way to go about it.

Use the encounter calculation rules in the DMG (or online calculators like Kobold Fight Club) for encounter design.
Homebrew as little as possible to ensure that all the numbers are consistent and reliable.

Level 1 parties are notoriously squishy, so don't feel bad if encounters end up a lot harder than you expect.

This will definitely be the hardest part because it is very individual for the DM. I focus on conflicts, places, and people. That's all I need and I try to prepare only the next session in advance. The idea is to continue building upon what you already made so as the campaign goes on, you don't need to make anything from scratch. You're just seeing how everything else in the world responds to the players.
