Pitch is the second number

pitch is the inches a prop will push down when rotated once (so turn a 5" pitch prop once, imagine it's inside of jelly, it'll go up 5") so pitch*surface is proportional to the amount of displaced air per rotation, and you don't need to push down as much air when you are on a smaller quad, so you don't need as much pitch on smaller quads, especially since smaller props are thinner than bigger props so going to as high a pitch as a 10mm thick prop will basically get the blades like vertical, 2.5" of pitch is already the highest that's reasonable on a 2.5" prop

I live much higher up than you (probably) so my preferred pitch will be a tad higher for the same thrust, but I'm a big fan of the new hq mck props and the hq 5x4.2x3 v2s and the hq j40, I would daily the last one if not for it's kinda terrible efficiency (idk if it's just because of the thinner air or crappy tune but I lost like 2min of flight time when using them but they fly awesome)

Made some good progress on that.

The arguably ideal setup is to have it on a 3 pos switch.
Airmode regular flying.
Idle up to emulate airmode for tricks such a perch or slide.
Airmode off.

I never bothered with idle up and just do on/off.
Off is a bit more squirrelly.

imo a good exapmle of a racing drone is this, they are buitl very differently the normal freestyle drone, the weight/kv/pitch is very different. most races also only allow analog and hdzero to race because of the amount of channels other systems take in. racers also use 2-6+ drones because of how fast they slam into gates at mach jesus they need to be abe to repair their drones really fast or have some backup drones they are also mostly identical to the main quad they are using. you also need to train ALOT in the sim, some of my racer freind have like 600 hours and they are areound 13 years old, you really need to train your refelxes and know how to race properly. it cal also be pretty furstrating sometimes (i speak from experience lmao )
