I’ve screwed a bolt too much into a motor and damaged the winding most probably. Is it possible to repair?

Likely No. Once the clear enamel finnish on those wires is breached, and they are smashed into each other like that, consider the motor dead. It might even turn the prop if you gave it power, but with coils shorted, it's going to fry the ESC and/or flight controller.

Motors can be rebuilt, but rewinding them by hand would take hours, and cost more than the price of a new motor.

that looks like just regular copper wire. what's on the motor is enameled wire. it's a clear ceramic insulator. you would also need it to be an exact match in diameter and alloy to the original.

same wire diameter, same length, same number of windings, then you gotta make sure it’s packed tight to fit the tolerance between the bell and the stator, same resistance
