https://www.youtube.com/watch?v=lmmrlpbxJz8 this might help a little bit, not sure if it answers your question specifically. I also know that it was updated since this video came out and I think some things about textures changed. TBH it's so new that not many people are knowledgeable about how to use it yet
Today I use Blender very poorly, but show off how despite my novice skills, the Soulstruct for Blender plugin lets me fix a Duke's Archives mesh I've wanted to fix for MONTHS lol. Hope you enjoy! #darksouls #darksoulsmods #darksoulsremastered #fromsoftware #ds1 #darksouls1

oh wow surreal to see my video when I clicked on this, ty! there is a mod help channel on my discord where there's quite a few people all using the soulstruct plugin if you ever have a question https://discord.gg/nHKqpB9Ks9 as for the question here, there's a checkbox for importing textures if using the Game MSB Part Import option. If you just use the Game Model Import option, it should load them by default from what I've found. And then swap over to Material Preview from the standard Viewport Shading to actually display the textures.
