So I am making a custom item and the last thing I need to do for it to work properly as intended is to get a image on the item and when I use “Minecraft:icon”: (“texture”: “dirt”), it does not show a image and it will not work

That probably won't work as it's a block texture. You can probably define a texture in item_textures.json that looks like dirt though, either the texture if you want it to fill up the item slot, or by taking a screenshot of dirt in your inventory if you want it to look like the block in the inventory, and use an attachable to make it look like dirt when it's held
