It is quite annoying she keeps splitting herself into three without any downside after killing all of them. Maybe deduct some health after killing her illusion? Makes the games tedious and not fun at all.

IMO they should do it like the fight in Hades 2 against Hecate, where she splits into clones but if you find the right one you can damage it like normal.
The Morak fight in the game Gauntlet (Slayer Edition) also has a similar mechanic, and again - finding the real one lets you damage it
