depends on what said non-stem major is
you'll probably find employment one way or another, but beware that you may make less than if you did STEM (depending on what you end up doing)

Business would be non stem and they usually don't have much trouble finding jobs
So it really depends on what it is
The other thing you could do is say you're going to study it at uni because you can and you enjoy it but while at uni think about how you can make yourself more upskilled for some career that you come across that you enjoy
It also depends on your circumstances, as rude as it sounds, some people have the cushions that they don't immediately need to go into a high paying career and can take their time to figure it out while some do

Id say go for it
you mentioned being incredibly passionate about it, id assume that you already made a plan and know exactly what you want to pursue in the long run especially in that field
but you have to always have a plan B for everything.
know that your planning may sometimes not work, but it can. there are quite abit of unsuccessful stem graduates simply because they werent passionate about what they wanted to do
if you are passionate, already have a plan, have your plan B. then go for it and dont listen to anyone regarding your desires
no one will truly understand you better than yourself, so only you are the only one to make rational decisions like this for yourself
