I liked the project and I want to see if it is viable to put it on more than one PC.

However, with Windows-only support, I would need to pay for a Windows license for every PC.

Would it be a problem to install Salad by compiling the source code? I mean, are these repositories enough to use Salad? Can I use Salad by compiling the source code from the repository?

ok, but it would be a problem if the park of machines started to being big, I mean, if I start to use it professionally

If you mean you want to use Salad on Linux, unfortunately Salad no longer supports Linux - Only Windows 10 and 11, 64-bit.

If you're thinking of building out some massive farm for Salad.. cost impracticality and ROI aside, some $20 Windows license probably isn't gonna be too big of a cost for each PC.
Also you could just not activate Windows

I haven't activated Windows on all but one of my PCs
