you have to wait for the mods to update to those snapshots
if you want to override the settings to "force" load the mod you have to change the settings in fabric.mod.json and recompile, but more than likely there will be more stuff that needs to change in the mod for it to work
The best way is to simply try and see what happens when you load the mod. If you're using a launcher, sometimes the launcher makes installing mods from the 'wrong version' hard, but dropping the JAR into your mods folder will get around that.
Once you do, you'll either run into a Fabric loader dependency error or some other error on launch. If it's a dependency error, you can use dependency overrides by making a file with this content at .minecraft/config/fabric_loader_dependencies.json: ```json

If you still run into an error on launch past a dependency on a specific Minecraft version, there's not much you can do past trying to recompile the mod on the newer version and hope that's all you need, or take the time to update that mod's code to the newer version. Both of those things are pretty advanced to do, though
