#Help with procedurally generated item textures (1.20.1)

I can't figure out how to assign textures to procedurally generated items. The name of an item and how many of the items are created are completely random.
You might need a custom renderer for the items? I have no idea how you would do that though.
Don't custom renderers require the item to have a model json?
