Do you mean the multiplayer screen where you pick a server to join, or the console where you see the server logs? Why can't you just join the server in spectator?

spectating requires a client view, rendering, etc. a server has none of that. so the question of what you expect that it would do is important because it sounds like you are asking someone to re-implement all the clientside only code into the server jar as a mod

I'd be careful with that, I'm pretty sure the server jars are free. It could easily end up being piracy.

One thing which makes this non-trivial, is that the server console is a basic swing ui, which minecraft is built using lwjgl. You'd need to get minecraft to render nicely to the ui (which probably isn't too hard) and pass trough mouse and keyboard inputs (harder). It's probably easiest if you just make it so that a client can maybe join in a special way to spectate
or just use a spectator account that never plays the game

Use an offline account to log into the server for a brief second, teleport to the player, and take a screenshot

best to keep the jokes to private or general spaces rather than collaborative ones, really. no, adding "lol" doesnt change the statement. imagine someone walking up to a conversation about how something can be engineered and one of the people just said "go away" and laughed at them,... not great
