You can totally be sparing with the jam! The idea is that scones themselves should not be very sweet so the jam provides a counterpart to it.

I have had US ‘biscuits’ once (and was 12 so memory is very faint) but my recollection is that they are more ‘flaky’/layered than scones
do you have a particular limit for the amount of sugar per portion? I think I actually have a recipe at home (written down) where I reduced the sugar (just for personal preference)…if it would be helpful I can check the macros and pass it along!

Scones similar but you have to ‘rub’ the flour into the butter…think maybe the dough is sandier by the end of the process, biscuits have more intact butter pieces if am interpreting you correctly?

I’m going off my one singular experience of a scone in Canada so n=1 and all that, but experience was 1. Too sweet 2. Not quite soft enough 3. Triangular????? The former two can be forgiven but this feels like a crime

Here they're hard square or triangular biscuits (american definition of biscuit here) that are usually quite sweet, but can also be savory (meat + cheese type thing). One big difference is that you always eat a scone by itself and not with anything. The only topping is a light drizzle of royal icing.

My reasoning is that I use a knife to spread the jam and then use a teaspoon for the cream. If I did cream first, then the jam would get all contaminated when I tried to spread it on the cream.

classic carbonara is just:
guianciale (but you can use pancetta or even bacon just fine in a pinch, Italians don’t @ me I’ll fight you)
raw egg, which gets cooked in the residual heat of the pasta. a higher yolk ratio makes for a richer carbonara!
grated pecorino Romano (you can also use Parmesan here)
you can add extras like garlic and herbs & such but that is the classic carbonara
so you want to boil your pasta
meanwhile fry your chopped (whatever pork you chose) until it renders and is a bit crispy
I usually do a 1:1 of 1 egg yolk & equivalent amount of grated cheese, beat them together
then drain the pasta and immediately coat with your sauce & add the pork…stir it well & it will become creamy & glossy. black pepper and you’re done! key is to not do this in a hot pan so as not to scramble your eggs

Guanciale is pork jowl and it’s very salty and fatty, a little goes a long way. Iirc you can use it for pasta amatriciana too? But I don’t cook a LOT of Italian so idk. Worth trying one day!

Hmm did you use buttermilk in there? I sometimes do that for mine & it can help to activate the baking powder, give you a bit of a leavening boost

If you check out the ingredients, it has something called lecithin in (from sunflowers. they’re also in things like egg yolks which is why eggs can emulsify mayo but I digress)
It has a hydrophilic and hydrophobic end, meaning that it can bind to both the oil and the aqueous component, making them miscible
