What is clotted cream dust I've actually seen some tiny jars at the store before

Its like thickened cream, cream cooked for hours till it separates and forms "clots"

i know i've had taro 100% on teas and mochis but like, other desserts, when they are announced as purple sweet potato?? is it ube or taro or none of them

they are different

echo plank

They are different things

They are all purple tubers but they are totally different species wise and taste wise

#

Purple sweet potato might be ube but is probably actual sweet potato

brave loom
#

@gloomy echo it is a bit different to soured cream!! It’s thicker and doesn’t have the sour flavour. Spreadable but maybe thicker? than butter, even. @royal zinc made some I believe!

brave loom
hardy surge
#

yeah

#

I like some. I buy this fantastix blueberry jam. Its just a lot are too seedy. Seeds and me dont mix

Scones are rather nice but hard to find here 😭

I hate that extremely common foods trigger my sensory stuff. Citrus zest does it too

I’m sure you know this but they’re incredibly easy to make! The bbc good food recipe is decent imo

rare British cuisine W

hardy surge
#

ok

#

I need to try more low sugar recipes. Kinda why I stopped

brave loom
#

I have had US ‘biscuits’ once (and was 12 so memory is very faint) but my recollection is that they are more ‘flaky’/layered than scones

do you have a particular limit for the amount of sugar per portion? I think I actually have a recipe at home (written down) where I reduced the sugar (just for personal preference)…if it would be helpful I can check the macros and pass it along! GC_pinkHeart but no worries if not

#

I think a lot of Taiwanese cakes tend to feature a lot of lighter/less sweet sponges, too…thinking….

main quest
brave loom
#

Scones similar but you have to ‘rub’ the flour into the butter…think maybe the dough is sandier by the end of the process, biscuits have more intact butter pieces if am interpreting you correctly? notes2 interesting ty!

brave loom

However the biscuit (American) comparison is appreciated/useful 😌

prisma garden
#

the UK is not a real country (internets are telling me this is a "tea biscuit" fuck off that is a COOKIE)

#

the "triangle wedge scone" thing is "weird, but i'll eat it"
very sweet though is ??? why ... that's ... what the jam is for

brave loom
#

😤 do not test me

cookies are a subgenre of biscuit typically chocolate chip and (usually, tho not always) more of a chewy (rather than crumbly) texture

#

my sibling has a tattoo of a rich tea biscuit lmao

prisma garden
brave loom
#

*rich tea biscuit

prisma garden

is it smaller than a scone and vaguely disc-shaped and eaten with coffee or tea. then it's a cookie to me idc idc idc

brave loom

let us have this one we don’t have much else going for our cuisine

o but if u make them yourself with a really dark chocolate layer…and u can cut the sugar and use a custard instead of a buttercream…they go hard idk
(acknowledging I probably have more of a sweet tooth tho)

definitely not in lab rn having a minor meltdown over baked goods

prisma garden

i do not know what half of those "cream" things are but trust your judgement

today's google doodle is two scones having some kind of weird standoff

tribal moss
#

more cream vs more jam

warm quarry
#

It’s jam first, then cream on top. Doing it the other way around is stupid because it flattens the fluffy cream

tribal moss
#

o i thought the shadow of the left one was a thin spread of jam cursedunsee but that makes sense

tribal moss
#

so it's like the cereal and milk debate

warm quarry
#

Okay another reason why I’m right is because jam doesn’t make the scone soggy like cream does! So jam must go first

brave loom
#

proper clotted cream is too thick to make a scone soggy 😤

prisma garden
#

i want to hear the pro-cream-first side.

#

side note is it ~~posh if i think that saying [lips overly rounded] "sconn" sounds goofy

brave loom
#

whoops lmao I tried to find where @dusky sky explained it (iirc he has devonshire heritage so is an expert on all things scone 😌 ) (endless pls correct me if wrong) and accidentally opened that mega stereotype thread from ages ago...that was fun

brave loom
#

#1097571653485080677 message

expounded;
cream is vastly superior to jam anyway so it makes sense for the jam to be an afterthought
sufficiently thick clotted cream provides a barrier layer between the (potentially sog-inducing) jam and the scone
I like endless' thoughts on tasting the jam first as well
also! aesthetically more pleasing to have a little strawberry perched atop your mound of clotted cream

||unfortunately for me I say the non-southern one, which doesn't fit with my accent but 🥲 can't escape the posh allegations ig||

prisma garden
#

i am pro-cream first because jam is kinda mid

brave loom
#

good.

dusky sky
#

This is my philosophy, pasted from another time I talked about this

#

You taste the sweetness of the jam first, and then that parts and is balanced by the clotted cream underneath before reaching the scone
It's the only way
Plus jam is thinner than clotted cream so it really needs to go on top

#

Also if you're using anything thinner than clotted cream then you're not doing it right

dusky sky
#

I might have to buy this lmao

echo plank
#

british scones are so different from american ones

#

Here they're hard square or triangular biscuits (american definition of biscuit here) that are usually quite sweet, but can also be savory (meat + cheese type thing). One big difference is that you always eat a scone by itself and not with anything. The only topping is a light drizzle of royal icing.

#

At least where I am everyone pronounces it like "phone" or "bone"

brave loom
#

(Not the savoury ones they are good with tomato soup or something)

echo plank
#

What you call a scone we'd call a biscuit

brave loom
#

I do think they are different in the flakiness and such but I can see the parallels

echo plank
#

Yeah, there are some differences, but they're basically the same thing

#

apparently scones here are similar to rock cakes?

#

Most of the time here you eat a biscuit with butter or gravy

#

That's probably a food crime for you lol

prisma garden
#

yes i have seen what are most likely rock cakes (?) being called "scones"

echo plank
#

Apparently scones here are called rock cakes in most other places

#

So what I'm talking about is quite different from a british scone

prisma garden
#

as a kid i saw "rock cakes" in harry potter and was baffled and thought it meant. literal rocks (??)

the weird fake triangle scones here are okay if they aren't extremely sweet but they don't have icing which is puke (icing is one of the worst foodstuffs ever made)

prisma garden
warm quarry
#

Okay but English people’s opinions (especially on food) isn’t valid so therefore it’s best to put jam first thank you for coming to my TED Talk /joking

prisma garden
#

never heard that one before

prisma garden
#

tastes not much like a scone. but looks like it

echo plank
#

Southern biscuits (we just call them biscuits) are really good even just by themselves

warm quarry
#

My reasoning is that I use a knife to spread the jam and then use a teaspoon for the cream. If I did cream first, then the jam would get all contaminated when I tried to spread it on the cream.

echo plank
#

I've never had an english scone before

#

I don't think I've even seen one irl

brave loom
#

They’re extremely easy to make

prisma garden
#

i've had things that are allegedly scones but are more like rock cakes
and not with clotted cream (one coffeeshop that is extremely good at baked goods serves these fake-rockcake-scone things with jam and ... butter?!)

warm quarry
#

I think the jams that I use/make have a lot of pectin in them and so they’re rather gelatinous as opposed to the more compote-like jams elsewhere

brave loom
#

They’re like the first thing you learn in home ec
also butter on scones is a thing! Just arguably less good

#

It is not my preferred but something about the saltiness of butter sometimes hits? Idk

echo plank
#

I'll have to make them. Got a good recipe or should I find my own?

prisma garden
#

butter is okay because it's still dairy but also it's odd because this place is, again, not just a coffeeshop but a legit bakery with very good food. so why not make real scones

echo plank
#

Serving an american scone (aka rock cake) with jam is wrong. Butter mayyybe but you're supposed to eat them by themselves.

prisma garden
#

those triangle things are not even rock cakes either. what ARE they

echo plank
#

scones

#

at least here they are

prisma garden
#

they aren't they're imposters 😤

brave loom
prisma garden
#

what i mean is. if you tried to map the weirdamericantrianglethings to a british baked good, which one would be closest. i don't think it's rock cakes but also i don't know what it would be

brave loom
echo plank
#

They're good though. There's a blueberry farm that has a store near me that makes really good blueberry scones (the triangle ones)

brave loom
#

Also they must be round!!!! You can shape them with a mug or something if you don’t have a cutter

#

and they only stay good for one day

prisma garden
#

i simply feel we need a new name for the triangle things. they aren't bad (as long as they don't have icing that's disgusting) but yeah with berries they're good. but they need a new name

brave loom
#

used to have them in one place where I waitressed & we’d be allowed to take them home at the end of the day bc scones that are not same-day fresh are unpalatable

echo plank
#

I don't have any jam. I could make my own clotted cream I think

brave loom
#

They should rise such that they have a natural split, and you can pull them apart to add stuff

#

Sorry I am apparently weirdly passionate about this

prisma garden

brave loom
#

classic carbonara is just:

guianciale (but you can use pancetta or even bacon just fine in a pinch, Italians don’t @ me I’ll fight you)
raw egg, which gets cooked in the residual heat of the pasta. a higher yolk ratio makes for a richer carbonara!
grated pecorino Romano (you can also use Parmesan here)

you can add extras like garlic and herbs & such but that is the classic carbonara
so you want to boil your pasta
meanwhile fry your chopped (whatever pork you chose) until it renders and is a bit crispy
I usually do a 1:1 of 1 egg yolk & equivalent amount of grated cheese, beat them together
then drain the pasta and immediately coat with your sauce & add the pork…stir it well & it will become creamy & glossy. black pepper and you’re done! key is to not do this in a hot pan so as not to scramble your eggs

prisma garden
#

thinking "what the fuck is guanciale" and how your "no i do not have an encyclopedic knowledge of Weird Ingredients" argument is becoming more and more thin 👁️ (joke) (i think not funny but) (this sounds good tho)

brave loom
#

Guanciale is pork jowl and it’s very salty and fatty, a little goes a long way. Iirc you can use it for pasta amatriciana too? But I don’t cook a LOT of Italian so idk. Worth trying one day!

prisma garden
#

ignore me kind of being a hater idk italian food is fine i like it fine it's Alright

#

||I agree tho I think some dishes are great! Love a puttanesca especially - but don’t choose it often over cuisines like sichuan or idk south indian||

I am just a fiend for vanilla in stuff tbh you don’t have to. The sultanas I don’t always include either. In fact these days I more often don’t

echo plank
#

idk what sultanas are but I am generally not a fan of dried fruits. Some of the recipes I saw put raisins in the scones and I think that would ruin it for me

brave loom
#

Prewarming the baking sheet helps to give them the ‘feet’ like macarons have (and yours do)
Sultanas are similar to raisins yes! I’m so so on them, usually I prefer plain

echo plank
#

Now I'm just eating scones by myself 😭

#

I mean I'm talking to you so not totally by myself but you get what I mean

You can also do a milk wash on top and it was a source of much debate at my workplace whether milk or egg was better. I am team egg glaze myself

Haha virtual high tea! I’m all for it

#

Love to see people on the scone train 😌

echo plank
#

I used a mix of both milk and eggs for the wash. It didn't brown as much as I was expecting but the scones are baked the right amount (as far as I can tell)

brave loom
brave loom
#

You def don’t want a lot of browning on top, they just get kind of shiny and a little golden

#

So impressed u made them!

#

ONE MORE thing I strongly feel vanilla paste >>> extract if u have it but I know not always easy to find

#

Vastly better tho

main quest
#

i dont know if you get the same kind of breakfast sausage as we do, its a specific seasoning mix that i couldnt tell you what is in it besides thyme

#

Traditionally, breakfast sausage is flavored with a blend of spices and herbs, mainly fennel, sage, and thyme. Additional ingredients like rosemary, garlic powder, onion powder, or even cayenne pepper can be used, as well.

brave loom

The closest thing we have I reckon is this Tuscan sausage the butcher does which is very fennel forward

#

more than any orange flavor

#

but it wouldnt be surprising if he likes it fruity, we have a big market for chicken sausage with apple and cheese in the usa

brave loom

Apple in sausage is a huge thing here too! I’m so-so on it. But this seems like orange zest would be just the aromatics so maybe not quite the same? Either way will put on my list haha kind of want to do these alongside cheese/chive scones to compare or something

main quest
#

apple is good because it usually just adds a slight sweetness but mostly adds texture, like onion if it held its crunch

on a wiki walk
someone brought up the atomic bombing of japan > i looked up the name of sadako sasaki (read the book about her as a kid and it deeply affected me) > nearly cried a bit > composed myself > looked up chazuke which was her last meal because i forgot what it was > it linked to lei cha as a similar thing

not seeing any hakka places that have it ... problem: it seems in toronto most hakka places are indian-chinese fusion (it's a thing, chinese food is kind of popular in india, makes sense given they border each other) but the most authentic-looking place i saw did not have it so i doubt restaurants here too + it's also hard and time-consuming to make at home + i fell off
might be something you can only get in asia ... perhaps i will try malaysian restaurants where it's also popular (lot of hakka immigrants in that part of asia like singapore) but it's a long shot

i'm like the opposite of this so it is hard for me to understand😭 as i child and pretty much still today, i would anything and as much as i can. my family would go to a restaurant and me at 9 years old would have the biggest portionGC_hahahahaha later on in my life i started thinking if that was healthy cuz i basically would not feel full after a big meal😋 i don't know how i also managed to stay skinny as a child lolll
