I have roughly 19x10 hands, and the EC shape is the best of any mouse I've ever tried. Budget is not an issue and I'm located in the CONUS.

MUST be grippy for dry hands. I used to get glossy coatings when companies had new releases that offered that, because they are by far the grippiest for me. Other coatings that are somehow still very grippy for dry hands are acceptable too, as I doubt I'll find new releases with glossy coatings.

MUST have extremely solid build quality. I grip my mice hard even when relaxed and it's arguably a neurological tic. Mice that most people say have "solid" build quality like those who claimed to not have flexing in their early Glorious releases, I absolutely had issues with flexing and creaking and how cheap a lot of lightweight mice felt back when they were first getting popular. I prefer the really solid feel of mice like Zowie/Vaxee/Endgame/Roccat, with Zowie and Vaxee tending to have the best feels.

Doesn't have to be lightweight. Most mice I use are in the 70s and 80s, anything in the 60s to 80s range will be more than fine for me.
In the past I did try the glossy Outset AX, which felt a little small to me but was usable, but I broke the side button after pressing it hard too many times. I know the Xlite V2 exists but I don't know anything about the coating and don't want a mouse with holes - perhaps if the V3 has coating my dry hands can grip, I can consider that. I considered the DAv3 as well but don't know anything about the coating and heard people felt the shape was clunkier and not as comfortable.
Also since the EC2-CW is on my radar, I'd like to ask some questions about the current state of it. What were the updates to it since the versions that came out around 2016? Are the side buttons less mushy? Are the matte coatings suitable for dry hands?
TIA!
