Launching GeForce now on mobile has now resulted in launching the game like I'm on PC, meaning no touch controls or virtual gamepad/on screen controls

When I touch the screen it also shows a mouse cursor

Yes. You touch the screen to left click, drag your finger on the screen to move the cursor. Virtual Gamepad can be enabled by following the images.
