When I try to update Don't starve together it just says "missing file privileges" I tried clearing cache, restarting steam, changing download region, verifying files and uninstalling and reinstalling the game. Please help me.

You and us, cannot solve it. This is something that only GFN team can fix.
Usually, the games update system is automatic. But, in a few cases, it fails and doesn't update as it should.
All you can do now it report this problem directly to NVIDIA:
