Yes, provided you buy it from Steam, Epic Games or Ubisoft Connect.

Once you own the game on one of those platforms, you simply find it in your GFN library, select whatever platform you bought it on (e.g if you bought it on steam, select "Steam") and then you can play it

(Note: If you have Ubisoft Plus, you'll need to add the game to your ubisoft connect library. This doesn't mean you have to install the game on your local computer. You just need to begin the process and back out of it.)

The editions do matter I think with AC games in particular, @dire verge did "an investigation" and the results can be found here.

There's a more updated list but I can't seem to open the thread. Search for assassin creed in the forum. With that said Ubisoft actually added more editions now. So you have to check on geforce now which edition is supported and on which platform.
