Couples Questions.. Im Lost

I have couples questions.
Im now trying build my first own mobile game which is 2D. I have triet to search answer from online, but didnt find any...
and sorry my bad english. I would really be thankful, if someone could even point me to right direction. Im so lost.

1. Question.

How i could make that kinda interactive UI? i would like it to change the number, when i move it in that scale.
Any idea how to code something like that? I know how to get thath kinda UI, but problem is the connecting it with code, so the number would change.

2.Question

Are these level on that pictures all have own scene? Im building simple learning app. And im wondering is there any other ways
like pressing button then another kinda text based scene load? Im trying to ask , like are there any like scrolling views or when i wipe right/left
then new view / scene comes? And what is best way to combine multiple smaller games in one, like those popular kids learning mobile games?

3.Question

I would like to know how to get animation in mobile game, when you tap screen 1 time comes animation,
when tap it 1 time more then comes new animation again ja 3. time tap it will still bring new animation.
touching same point in screen.
Like interactive animation.....

1. I would use slider (If the bar doesn't move and the arrow does). Get slider value in script. Slider is fully customizable in terms of image/colors/shapes
   Or otherwise use finger position
