you should install a version that doesn't have the security issue, yes.

it technically can break things, but patches shouldn't - you'd be updating to the latest 2020.3.x version that has the patch

you should have vcs and/or backups anyways tbh

as long as you have version control and backup but you may encounter bugs you didnt have before...(happened to me)
imo if you have a project working fine with your current editor version just patch the final build/binary with the patching tool
