"HDR color" first and foremost means that color values in your buffers can now exist outside of the 0.0..1.0 domain (ie. they'll be higher than 1.0.) This won't do anything out of the box as long as you don't set up post processing that does something with that information, which in many cases means bloom, lens flares/streaks and color grading. That's what you'll want to look into I think.
