You could look into:
Virtualized Geometry (i.e. Nanite)
Mesh Slicing
Volumetrics sounds fun, could also consider FFT waves and/or cube marching vertex manipulation. GPU instanced (indirect) culling with LOD could be a fun problem to solve too. Could also do some general heightmap terrain slider and gui, then develop the lighting and shadow mapping algorithms for it all.
