I'm mainly working with 2D games so I want to hear more about the plan to support 2D in both graphics and physics systems. When can we expect 2D support to be available?

Unfortunately, Entities Graphics does not currently support 2D rendering, and it is currently not on the announced roadmap. I would recommend you to submit feedback regarding this on our public roadmap at https://unity.com/roadmap/unity-platform/dots, so we can take it into account in our planning.
Unity 2023.1 should make Unity 2D rendering compatible with the SRP Batcher, which should significantly improve 2D rendering CPU performance.
