Make the animation of our own knight customizable, being able to choose from a variety of options of animations, rather than just the default 'active' animation for the male & female knights. It feels so monotonic. Add this just for fun. This would also make the guild hall feel more lively.

Well, they implemented guild hall customizations, so I don't think it would be that difficult.
They can just take their time, like they did for it.

I find it difficult to see who would stare at a knight in guild for more than 10 seconds for an animation

I do lol, I do enjoy the graphics.
If players do stare at the guild table, then logically, they would stare at that too.
